This recipe comes from the Windmill Inn, a bed and breakfast in Chapman, Kansas. I had never seen a cookie recipe like this one, so I had to give it a try. They are delicious! As Joel said, "This might give our old favorite cookie recipe some competition!" I substituted white "chocolate" chips for the milk chocolate chips to give the cookies some variation in color and flavor. The recipe indicates that the oatmeal may be omitted, making for an "overly rich chocolate cookie that melts in your mouth."
1 1/4 cup flour
1/2 cup cocoa
1 t. baking soda
1/2 t. salt
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 t. vanilla extract
2 eggs
1 cup milk chocolate chips
1 cup semi-sweet chocolate chips (I used dark chocolate chips.)
1 3/4 cup oats, either quick or old-fashioned
Combine the flour, cocoa, baking soda and salt in a small bowl. Cream the butter, brown sugar, granulated sugar and vanilla in a large mixer bowl until light and fluffy. Add the eggs 1 at a time, beating well after each addition. Gradually beat in the cocoa mixture. Stir in the chocolate chips and oats. Drop the dough by rounded tablespoons 2 inches apart on ungreased cookie sheets. Bake at 375 degrees for 10 - 12 minutes or until the edges are set. Let stand for 2 minutes before removing to a wire rack to cool completely.
