Syrup in the Making




Yesterday was a beautiful day to be outdoors (don't let the snow in the pictures fool you), so we spent part of the afternoon watching maple syrup in the making. David and Marilyn, with the help of extended family, have been making syrup for 35 years, so they qualify as experts in my book. The top pictures show their nephews sanitizing the tree with ammonia water and collecting the sap. The sap is placed in pans over a wood fire and boiled until it reaches the proper sugar concentration. They usually collect around 1000 gallons of sap, which makes about 20 to 30 gallons of syrup. Marilyn, correct me if I have those numbers wrong.
